Water 300g
Fresh baker's yeast 15g
T55 flour 400g
Salt 2 tsp.


  • Put the water and yeast in the bowl. Add flour and mix for 20 seconds on speed 3.
  • Put the dough in a bowl or leave it in the bowl without a lid and cover with a cloth. Leave to rest for 2 hours.
  • Place a container of water at the bottom of the oven. Divide the dough in 2, flour and form 2 balls of dough on a baking mat. Make slits with the blade of a knife. Bake for 30 minutes at 240°C.
