Hollandaise

The hot butter and lemon emulsion.

INGREDIENTS

Butter 100g
Eggs 2 yolks
Lemon juice 1 tbsp.
Water 1 tbsp.
Salt 1 pinch
Ground pepper.

STEPS

  • Install the "sheet" attachment. Add egg yolks, salt, pepper and water. Blend for 2 minutes on speed 2.
  • Melt butter in microwave for 1 minute. Add lemon and melted butter. Blend for 2 minutes on speed 2.
  • Heat to 60°C for 2 minutes on speed 1. Serve hot with poached fish, asparagus tips..."
